Food: Forgotten English Pies on the Menu at Welbeck

The opportunity to learn long-forgotten cookery techniques with one of the UK’s most celebrated food scholars, Ivan Day, is just one of the fantastic activities in store for visitors to the Welbeck estate, near Worksop, this summer.

Ivan Day is a renowned food historian, with his expertise for re-creations of historic meals and table settings in high demand. This summer, he will be teaching at The School of Artisan Food at Welbeck with two fascinating courses which will bring long-lost recipes back to life. Students on the ‘Historic Pies’ and ‘Historic Ices’ courses will create a selection of ice creams, sorbets and pies spanning the centuries, drawing on Ivan’s amazing knowledge and using his rare antique kitchen equipment. Taking place on 6th and 7th August and 3rd and 4th September and costing £175, the one day workshops (9:30am – 5:00pm) are ideal for anyone with a passion for food and history. Welbeck is an ideal location for me to take students on a culinary journey back through time and create historic foods. These are endangered recipes, and it’s wonderful to be able to keep them alive and pass them on through charities like The School of Artisan Food. Although many of these recipes seem unusual and complicated to modern cooks, at their heart lay skills and ideas that can still be used today.”

Across the estate at The Harley Gallery, the creative cookery theme continues as visitors can design their own bespoke kitchenware with ‘Paint a Pot’ workshops; from hand prints to carefully painted masterpieces, anything is possible in these sessions. Workshops are suitable for all ages and will take place every half an hour on 20th and 21st August and cost from £3. Visitors to the Courtyard at Welbeck can enjoy The Harley Gallery, where exhibitions and children’s activities run throughout the summer holidays, and RIBA award-winning gallery for Welbeck’s historic Portland Collection.
